Atypic chocolate comes to Melbourne

Artisanal chocolatier Atypic Chocolate has opened its doors at Melbourne’s iconic South Melbourne Market. Established by French trained pastry chef-turned-chocolatier Charles Lemai, Atypic Chocolate offers handcrafted, single-origin, small batch chocolate that is made on site – from bean to bar.

The stall’s large viewing windows mean visitors can watch the entire process – from roasting, de-husking and grinding the nibs, to refining the balance of flavour and texture (conching) and molding the chocolate. The humidity controlled space is set to an optimal temperature of 20 degrees, creating an ideal environment for making and storing chocolate.

Atypic Chocolate’s range includes single-origin chocolate tablets in dark, milk and white chocolate, chocolate pastries like decadent brownies and hazelnut merveilleux with mounds of crisp meringue, organic praline and single origin Solomon Island 70 per cent dark chocolate, European-style hot chocolate with dark chocolate, spicy chocolate or matcha white chocolate options. Chocolate soft serve will be added to the menu in summer.
